Early Years
Welcome to Wandering Hawker, where every dish tells a story and flavour evokes memories. I’m Bistrith Dewan, with over two decades in the culinary world, where I’ve cultivated a profound understanding of ingredients and the magic of food.
My vivid food memories begin in Hong Kong’s bustling evening markets. Wandering with parents, surrounded by sizzling woks, steamy smell of boiling seafood, and smoky aroma of skewered meat, these vibrant street flavours imprinted, sparking a lifelong passion.
Later Years
My late childhood to teen years in Nepal brought new culinary adventures. Home-cooked, spiced meals and comforting mo mos, alongside Newari cuisine in Kathmandu proved profoundly inspiring. Around age 12, I began cooking and baking.
Later as a young adult, Singapore was pivotal. Singapore offered unparalleled culinary education, from hawker centres transforming humble ingredients into world renown cuisine, to demanding fine dining kitchens. I mastered making inexpensive ingredients sing and coaxing quality from luxurious ones. The clash and harmony of flavours was amazing.
Years as a Chef
My journey led to London, where I explored global cuisines across all kitchen levels, understanding diverse needs and preferences of people. This period of intense culinary engagement and my continuous travels around the world, deepened my appreciation for markets and street food, constantly revealing new techniques and experiences. This solidified my desire: to bring the flavourful, satisfying and easy food I love directly to people.
